Since Paco was a child, when he was only nine years old, he knew he wanted to create me, and at the age of 24 he became a jamones´craftsman in Bronchales. Paco’s family had to leave Brochales, his hometown, like almost everyone in that era who lived in rural areas in Spain, in search of a better future. However, Paco always asked his parents to let him return to Bronchales, in order to realize his dream.

When Paco wanted to create my heart, the drying room of Jamones Brochales, a negotiation process with the Government of Aragón (Spain) started. Once Paco explained to the Government of Aragón (Spain) what he wanted to do and how, this was the moment when Paco became a true craftsman. According to the Government of Aragón, Paco was the quality system himself, his hands and the knowledge and art he had inherited.
